reverse sear rib steaks

I'll be reverse searing some Rib Steaks marinated in Korean bbq sauce. We've had it before and the wife loves it so that's what we're cook'n up this eve:

finished. Failed a little bit as I didn't get the coals burning enough for the sear but it came out alright

I usually soak at least 8 hours/overnight but I think you could get away with doing less as it won't soak thru the whole meat. These are great when you get the "slight" char on the fat, I don't know the science or how to explain it, but it's when the marinade sugars and fat starts to hardeen before it starts to burn and having that acrid taste.
