Love a thick chop! If you have a butcher close by, ask for a double-bone chop. I did these a while back and they were amazing.

Cut up two chops for pork tacos and griddled with onions in the 15” lodge carbon steel on the 26. No pics but absolutely incredible.
Still two chops left. Maybe pork stir fry tomorrow.
