1 week away thanksgiving menus

Only one week left if you can Believe it this year is just flying by. So what does everyone have planned for turkey day feast?

Heres what my menu is going to be for 9 people total

On the grill-
Bacon wrapped turkey breast 7lb
Brown sugar honey mustard glazed spiral ham 3lb
Smoked mac'n'cheese
Corn on the cob

In the kitchen (my wife told me ahe wasnt not going to cook something and i cant have all the fun)-
All the veggies
Pumpkin pie

Going to be a lot of good food and football to be had

Hosting.

Have two breast only bird cavity's I plan on dry brining and cooking quickly on the WSM.

I may set up my 26's to operate as makeshift ovens to free up oven space inside.

As far as everything else...I will delegate items to the guests (what they want to make/bring) and I'll bat cleanup with the rest.

I have four cornish hens in the freezer...They will get brined with LOTS of fresh rosemary, cut in half, and smoked with pecan in my stick burner (sorry, not Weberized) and glazed wit an orange/balsamic mix...Mrs. FREAK will prepare all the rest of the feast in the house...Just three of us so it won't be a big production...

Small group of 6 this year but we love leftovers.

Appetizers will be assorted cheese, and crackers, sliced apples and persimmons from our trees. I like to have folks hungry and drooling when I drop the platters of sliced turkey on the table.

-spinning a 20.60 lb fresh turkey on the rotisserie with a light apple wood smoke
-maple bourbon glazed yam dish
-mashed red potatoes with the skins left (Karen adds whipped cream cheese and butter)
-string bean casserole
-turkey dressing made with Beckmans brand traditional stuffing
-Karen's homemade cranberry sauce made using fresh cranberries
-homemade turkey gravy of course
-Beckmans fresh pumpkin pie (X2)

And just maybe a bottle or two of Russian River area Pinot Noir and Napa Zinfandel

We always host and I spin one bird and spatchcock the other. I won’t be smoking either of them this year ; I’ll be trying something different. Thinking about removing the skin from the spatchcock one and using a honey mustard glaze on it. I dunno yet.

Remove skin? No! I’d do this:

Cleanly cut the skin off when it’s raw then drape it over the bird once you get it on the grill. Let the skin get nice and crispy. Then remove it, put the glaze on then put the skin back on.

Just a thought.

Only five of us this year. So a smaller menu.

On kettles:
Spun 13 lb turkey
Roasted sprouts
Dressing
Green bean casserole
Gravy

And my daughter is making mashed potatoes. In the kitchen.

Thanksgiving is fun and easy if you plan ahead and light a bunch of kettles. Stress free.

All I know is I'm spinning a couple of turkeys and I fire up a couple other grills to heat up sides, gives the mil room in the oven.
Trying two smaller birds instead of one larger this year...heard smaller ones are better, I don't know, but we'll find out
