If you want a grease fire, cook skin on indirect without a drip tray with lid on. No fires this time around. Then the next cook dump your coals evenly across the grate and cook something direct with lid off. That will create an intense grease fire [emoji3]. Still you can just put the lid on. One reason kettles are much safer than gas grills for people who don’t clean.
