Coming back home...

Just wanted to introduce myself. I'm a lifelong griller/smoker that used to ONLY use charcoal but a boat and kids persuaded me to propane. I needed to get back to good ole fashioned grilling and smoking so I picked up a Premium Kettle and over two days, cooked about 10# of beef! I love this thing!! I'm doing spare ribs and rib tips, smoked sausage and chicken breasts for the 4th so I had to get this thing broke in right. My plan on the ribs is to use the bank method along with a rib rack. Any suggestions will be gladly accepted! I hope everyone has a safe, and succulent holiday!!
