More grilled chicken caprese

Brian made some awesome looking caprese a while ago.  I wanted some Grilled Caprese a la G$ tonight.

I marinated the chicken a few hours in a basil infused olive oil and balsamic mix, and sliced my mozzarella, vine tomato, and red onion.


Chicken is Done, so I layer the cheese ...


GRILLED Tomato ...


And GRILLED Red Onion. I then sprinkled my sweet basil and garlic seasoning  ...


... and closed the lid for a few minutes.  This is the last photo in the series because when it comes plating time, I ditch the camera and just start eating.  The caprese got a final drizzle of balsamic and the salad was served with caesar or a balsamic vinagrette.


I actually stuffed the salad and chicken between two pieces of crusty bread and ate mine as a sandwhich.  That was awesome.  I think a more proper caprese has the cheese, tomato, and basil as fresh components, but I like the "all grilled" style of "Caprese a la G$" as well, and the red onion puts it over the top.
