I can't stop lovin my Weber!!!

Fridge or freeze depends on how long between when you cook & when you're there to finish...

Might as well separate, you're doing ends with the one piece anyway & that way, the other piece can heat by itself correctly....

Is the Chargrill the only weapon on site?
If so, what's the plan for re-heat / burnt ends (two different operations beyond just the pork) ?

If you mean you are cooking the brisket in advance then vac packing it, I would suggest reheating it the vac pack in barely simmering water.  It will taste like it just came out of the smoker.
