So mama treated me to this small roast /tomahawk

I got some Stubbs to cook it with but what's the best bet?  I'm a little concerned about flare up

I've never done a Cowboy, but I've done several Porterhouses almost as big and I agree that Reverse Sear is the way to go.

I could have cooked a little longer before my searing. But that aside my transition was fairly smooth

250 until IT hits about 110-120 (looks like a pretty big hunk of meat so I'd say anywhere from 30 minutes to 1 hour). Take it off. Let the coals get super hot. Sear for about 2-4 minutes a side.
