Smoked corned beef

Lots of these on sale for the upcoming holiday/drink fest. Picked one up yesterday figured I'd go ahead and smoke it.





Also the first time using the CB door.

Hell yeah. I've always wondered what a smoked corned beef would taste like. You'll love the door. That made a huge difference for me.

@HoosierKettle I guess it's basically pastrami. So it should taste damn good. So far, the door is working like a charm. No smoke leaking through at all!

It's not just the tight fit that makes it better imo. It's also the heavy gauge stainless that keeps things nice and even and more efficient.

did you soak the corned beef in water overnight before smoking?  I was going to do a corned beef today and looked up a recipe online and it recommended soaking it in water to reduce salt content.  I wasn't planning on doing that but just curious.  also, did you wrap?

anyone else with tips please chime in.

@hoosierkettle I didn't soak just rinsed well. It turned out a little salty but didn't think it was overly salty. I wrapped it at 150 to speed up the cook. You can see on my pic where the temp climbed quickly after wrapping. Sorry didn't see this message earlier. Hope it went well!

It turned out great. I soaked mine for 2 hours and changed the water once. Mine was the same. A little salty but really good. For the rub I just used pepper and granulated garlic. No salt. I wrapped at 170 with a little beer added.
