Winter WSM
« on: January 31, 2017, 02:23:08 PM »
It's -2 (about 28 F) out and there's a light dusting of snow on the ground. I've never used my WSM past late October so this is the first time I've tried smoking in winter.

WSM base set up:

Performer being used to start coals up:

Lit up and ready to be reassembled:

Two racks of ribs on:

Fingers crossed this goes well!

No problem. I've used the wsm in much colder.

No problem. I've used the wsm in much colder.

So far it's been holding the temperature like a champ three hours in and counting with two minor vent adjustments. I went from three down to one, then up to two as the burn progressed into the unstated coals.

It's since started snowing again and you can see the radius of heat being thrown off the smoker where no snow has stayed on the ground compared to the surrounding area.

Ribs about to get their first spritzing:

It was sunny and 80 degrees here in Garland today. How'd those ribs turn out?
Looking for colored 18's and SJ's.

Ah, I forgot to reply with how the ribs turned out.  They were good, if anything a bit over done (got distracted trying to do too many things at once).  I'll definitely be making year-round use of the WSM for sure now....

WSM definitely does fine year round. Also, one good thing about ribs is that they taste fine when they're overcooked.
