Deviled Eggs

Was going to do some traditional ones for tomorrow but the shells were sticking to bad. Did the whole add salt and ice bath thing. Not sure what happened. So I'm going to make smoked deviled eggs instead. They may not be pretty when done but hope they will turn out ok.

Fresher the egg, the harder to peel. Some baking soda in the water helps too.
Still need a 22” yellow

I turn to Costco now for pre peeled hard boiled eggs.

Let me know how the smoking turns out.  I would like to give that a try.

Tiny little hole in the bottom of shell and peeling while still hot works for me.

I've had good luck adding vinegar in the water while they boil even fresh eggs seem to peel  without much fuss.

best boiled eggs i've done have been via pressure cooker.
cup of water in the bottom, eggs on a steamer rack. cook for 6 or 7 min once up to pressure. quick pressure release and then into ice water.
shells come off easy and yolks are done w/o any gray.

for deviled, do the above, then cut eggs in half and pop the yolks out, mix with vinegar, mustard and mayo and return to divots in the whites. top with paprika and a jalapeno slice and you'll never have any left over.

I did a batch with my new Anova Sou Vide - 170 degrees for an hour. Came out fine. Peeled OK, but really no different than any other method. The eggs were pretty fresh, so I need to remember to keep a dozen that are at least a couple weeks old. That seems to help.

After sitting in the fridge overnight, I smoked them using a couple chunks of apple wood for about 20 mins. Nice subtle smokey flavor. I made egg salad with them. Very good. By the way, this photo is deceiving. I had a batch of cold leftover charcoal rom the previous cook, and just dropped about ten lit on top of the pile with a couple wood chunks. Temp hit about 225, but cooking was not the objective, I was just making smoke.

Sure does. They turn a nice golden color. More so with time, but a little smoke goes a long way with eggs.

I smoked them for 30 minutes and they were still white but just a little bit darker. Seperated the yolks and put in the fridge. Will finish them today before dinner.

Steaming is the ONLY way to do hard boiled eggs. Hands down Easiest peeling you will ever do.
