Heres the set up.
Needed 3 more briskets. Fired up the WSM 18 minion style with stubbs. Set up the SSP with KBB 3x2 snake.
On the wsm, temp was crazy hot. Only used 1/2 chimney of hotties..
Temp was climbing to the stars. Had the vents closed and she was a runaway... hit 325. I pulled the briskets off. Let her calm down. Finally 250... put the back brisket on and was all good by 8 am. Jiggly
Temp in the kettle came up and held steady at 240. I had the full 15 lbs packer on the kettle. Easy peasy. She knows the way.
I had a visitor @bob bq dropping off a crazy roti score. As we chatted, We figured the only vairiable was using stubbs.
Noted and agreed. Will use less stubbs hotties next cook.
