My first brisket!

Got my first brisket today! Seasoned using spicy mustard and rib tickler rub,  it was kinda small cause I didn't want to f#@& up a 50 dollar brisket.  It was still 20 bucks.  Threw in a pork rib for good measure.  Currently trying to keep Temps under 250 without killing the fire

Looks like fun to me. I've never done a brisket. Don't stress too much about the temp. :)

What's the consensus on Int.  Temp?  I keep seeing 200 degrees but that seems awful high?

204f if I were to say. Should prob like butter dude. Something magic happens at 204 and I use a blue thermapen.

Not sure where it went wrong but it came out tough.  Still delicious but a bit tougher than I like.  On a side note,  my wife wouldn't touch the ribs cause they "looked" burnt! They turned out absolutely delicious,  tender but not fall off the bone!

Did you cut it the right direction?  Usually somewhere between 198-205 it will probe really easily...like a hot knife through butter then its done.
