Split Turkey Breast

Bone in whole turkey breast Scalloped Potatoes and green beans with bacon

The local grocery had these Turkey breast on sale so I picked up a few for the freezer and grilled one up to enjoy. After some trimming I decided to split the breast so it would lay flat.


Plenty of rub including under the skin , I let it sit in the fridge for a few hours.

I set up for indirect heat , target range 300-350 , peach wood for smoke . After a quick sear on both sides , I moved it to a warming rack to roast with the thicker part of the breast facing the fire.



1 hour in


Mixed up some scalloped potatoes ( boxed ) for side

After about 3 hours the turkey was ready to rest


I finished baking the spuds and threw on a skillet of green beans and bacon.

In pulled the turkey at 165 and let it rest for about 30 minutes



Nice pink smoke ring

Looks awesome! I haven't done a turkey crown but I really like doing whole chicken breasts that way.

How was the breast at 165?

I ain't mad at that bro...at all!!!!!  Wow.  I'll have to try splitting them next time I do a turkey breast!

  A little more done then I like, I got busy and missed my mark still juicy so I was happy
