Chicken Caprese on the Performer

Decided to toss some chicken breasts on the performer.  I was able to get some really sweet grill marks, I was so excited

After a few minutes I moved the chicken to the cool zone.  Once it was there I put on some fresh mozzarella that had been drizzled with a little balsamic,

Then the tomatoes,  and some fresh basil from the garden.

I had to leave a few with no tomatoes for the kids.  The it was served with a little penne pasta.

Was pretty darn tasty, and was the perfect light meal for these insufferable 100+ days we have been having.

The last pic is the 'money shot'!  Does that look fantastic or what?  Adding that to the top of my list when I return from vacation!  The restaurants here suck and are over priced.  I'd kill to have that chicken caprese now!

I like the grates.  I have had no issues.  MAybe the Graycort ones might be a little nicer but for the price I have been liking these so far.  Plus I like to toss the middle part on the 18" if necessary.

Wanted: 18" Platinum any color will work

Brian, that looked like a great idea with the mozz cheese and tomatoes.  I'm gonna give this one a try too when I get some time!
