Chicken in a Basket

Spatchcocked a chicken and coated with a mixture of olive and buttery popcorn oils , I seasoned with a herb and lemon pepper rub .
I used a chunk of citrus wood and a few Apple chips for smoke

It's called a flat spit basket , great for ears of corn and spuds. I really had to squeeze the chicken in there and the results were similar to bricked chicken or weighted chicken
