Scotch Eggs

What you will need:
1lb bulk breakfast sausage
3-4 hard boiled eggs
Wolfe Rub Original (optional)

Break the breakfast sausage into 3-4 equal portions and form over the hard boiled egg to completely cover the egg with a uniform thickness all the way around.  Liberally coat in rub.  Place on the smoker or grill and cook in the 245º-260º range for approximately 45minutes to 1 hour, until the sausage is thoroughly cooked.  You can do these on a broiler pan in the oven too if you prefer.



Let cool slightly, slice and serve.

I have been wanting to do these forever! Thanks for posting this recipe Larry. It's at the top of my breakfast list now. :D

I just did these the other night for some buddies.  What a hit!  I need to cook some up for breakfast. mmmmm
