Saturday morning @ grocery & saw 5# of bliss, marked down on special (less than $6!?)
rinsed & poured half bottle of Italian dressing in a zipper for an hour...
set approx. 3x to go half around the base (+ few brick warmers)
50# mini mesquite logs & I split w/ hatchet seems better deal for smoke
but be careful they do burn HOT
Almost ready (I use a cheap 12" fryer thermo adjusted to approx grate level to much success
a few quick slashes (excess fat = yum) & piled on the cheap "blackened rub" w/no sugar
275 peak temp with the sun but the basement brick & steamer can held it steady for me
No wrap or cooler needed, I just place in microwave to rest a while (KISS after all)
Over 2x qt containers when pulled. Here is my plate pic
I credit the perfect Smoke ring to the Italian dressing (oil base)
