First cook on the roti... jerk chicken wings and thighs!

So I picked my roti up yesterday with a three wheeler. I fitted the roti on the performer and marinated some chicken thighs and whole wings in some jerk seasoning and orange juice. Seasoning made by McCormick. And on they went will see how this comes out.

I love jerk everything. Beef patties and jerk chicken every day on the beach in Jamaica. It was a good trip that year.

That looks really good.  I see you found the rotisserie spacer doesn't seal too well.   Did that tin foil help?  I was thinking about getting that nomex gasket stuff I see people use on the WSM's.   Not sure how well it works, but those that have used it seem to be happy with it.

Jeff, it seals pretty well on the three wheeler in came on. The tabs that it sits on sit level on that kettle. But on the performer the nuts on the inside of the bowl that hold the lid bail don't let it sit flush and cause it with weight on it to kind of egg shape a bit. Thus the foil at the front and the back. I  considering grinding some clearance spots on the bottom so it fits on the performer better and am also considering the nomex  gasket as I have access to abundance of it at work. Also considering making one of the holes that the rod goes through into a u shaped slot for easier placement of the rod assembly on the ring.

I've done all those mods to my roti ring and it makes it much more user friendly

This is my Kettle there are many like it but this one is mine......
