My wife is weird about chicken thighs as well.  She will mow down on some drums and wings and probably eats enough chicken breast to where she'll start sprouting feathers and lay an egg soon.  But she turns her nose up to thighs.  Really odd.

None of us cared for thighs for a long time but we all love them now that I know how to cook them. Boneless skinless are great. They work awesome for kabobs. They don't dry out as easy as breast meat and usually nobody realizes they are eating thighs. It's a good way to sneak them in. Try it sometime. I bet they won't know the difference.

Another way to introduce dark meat to the timid is roast a whole chicken then break it down for a soup. The texture and flavor of the white and dark meat in a soup is really good and again most people don't know they are eating dark meat.

Chicken thighs are great...boneless is better, but bone in is ok too. Those you did look really good.
