Oops, "use by" (3 days ago). Aged!? New York strip, pre seasoned ...






About 4-6 minutes indirect, each side, then "seared" (not really seared per se, but direct for a couple minutes.)










Oops, 126 degrees. Pulled too early? I put them back on, but indirect.




I blinked, and they were at 133 so I yanked them for good.

I really really really wish I could always afford New York or Rib-Eye for any non-hamburger beef usage. There just is no comparison to pretty much anything else.

Yeah I got spooked and didn't realize it would rise so quick put back on indirect. Hell, it would have risen just sitting in the kitchen of course. Live and learn. But it was still great.
