It has been a while since I posted here. The last year of work has kept me pretty busy and unfortunately, have not had time to use my kettles as often as I would want to.
I decided to try making a bacon wrapped, grilled cheese sandwich. Started with a baguette, split it, filled it with Gruyere, mozzarella, and blue cheese. Wrapped it in bacon and cooked at 275 on the kettle.
Bisbee gets the call:
Used 1 chunk of pecan, filed the SNS with 1 chimney of half lit charcoal
Bisbee settling in nicely:
Very nice and savory. Makes for a great afternoon snack, or slice it up and put an egg on it for breakfast:
For dinner, cooked up some nice Costco "eye of ribeye" steaks. Bigger than a tenderloin, and almost as tender. Used lump charcoal and a grilling grate to get some nice grill marks:
Plated with a sweet potato and homemade Caesar salad.
A little cabernet and some homemade huckleberry BBQ sauce.
Cheers,
Winz
