This Saturday is the official grand opening of Malcom Reed's new Bbq store Malcom's Shop in Hernando,  Ms . Lot of bbq guests and food all day. Boiled crawfish, wings , Tri tips , ribs , and more all cooked on different grills. I'm smoking the  Tri tips on the drum then searing on a 26. It's free for anyone that wants to come and hang out. Also if you are a member of FB join Let's get to cooking group .

Curious how large of a hog you can fit on a ranch.  I would really like to try this.  I found a processor in northern Indiana that sells whole or half hogs.

I cooked a whole 42lb hog on a Ranch with a roti on NYE. Pig barely fit, I had to lope off about an inch or so off the from feet. Pig will shrink while cooking.

Roti style would be similar to "running style" fit wise.
