Easter Meal

I decided to go a little non-traditional for Easter.  I've always wanted to make the dinosaur bone style beef short ribs.  I cannot find them anywhere at a grocery store or Costco.   I found out my local butcher can provide them, so I asked for a three bone slab.  I cannot wait to fire up the WSM tonight for these.  Small trim of the fat cap to ensure I had good bark.  Seasoned with spg.    Indiana hickory for smoke.

Finished pictures.  Smoked on my 79 weathered warrior instead of the WSM.

Before wrapping

Bones pulled right out.  Very tender and rich like fatty point brisket.  Ended up shredding it.  Happy Easter!

Moody Meats in Avon.  Locally raised cattle and hogs.   The beef is pricey to me, though.

I'll have to compare prices. I've just started going to archers which is right around the corner from me. They also source local meat. They don't have a fancy store front so maybe they are a little less expensive. Their tri tip is $6.39 a pound for example. Not cheap but not too high when compared to sams when they have it.

Archers will provide whatever cut I ask for but I have to order it and when I get it there is a fair amount of trimming to do.

They actually slaughter them there and package stuff up pretty rough around the edges. In other words it's not prettied up for appearance but I've been pleased with the cuts I've gotten so far.
