Fired up the Black Pearl on Wed for some PSB. Started with a 3.75 chuckie from Aldi seasoned with "House of Qs", Peppered Bovine. 1st time using the Peppered Bovine which was part of my calendar prize, thanks Matt @604. Set up the original SnS+ and it locked in at 260*. Chuckie went in at 10:30am and hit 165* at about 1:45 and was placed on a bed of Sliced green bell, red, orange and yellow peppers. Minced a head of garlic and finely diced the jalapeno. Poured the Guinness over top and covered the pan with foil. 3 hours later at about 350 the chuckie passed the spin test. Shredded on a fresh Ciabatta roll with provolone, this has to be one of my favorite sandwiches. Enjoy
