10lbs bone-in pork shoulder question

Looking to roast it (not smoke) on my kettle. Going to be using my charcoal baskets on each side. I know I should pull it off at between 190 -200 but what temp should I be looking to reach inside my grill? 350?

I would go anywhere from 300 to 350. When you probe it, the probe should slide in like it's butter...

Yep. I started it a bit high (around 400) but then after an hour or so held it steady around 325. Foiled it after 2 hours. Put it on at 11am and came off around 5 or 6pm. Came out great, shredded easy
