Hot And Fast Side Ribs

I was chatting with MacEggs this morning and he was talking about hot and fast ribs....got me to thinking. After a bunch of running around this morning I picked up a whole rack of side ribs. Cut it into a chine bone strip and a St Louis cut then coated in olive oil, salt, pepper, ghost pepper rub and paprika. Smoked at high heat with peach and Scotch barrel wood. Wrapped in foil with margarine, honey and hot sauce partway through. Finished with Stockyard bbq sauce.

Seems like more and more guys are liking hot and fast ribs. I'm definitely going to try it. Nice color man.

I have my high-heat ribs currently on the go .... Thanks for your advice ... Of course, you know I will do my own thing, anyway ...  ;D ;) ;)

Time was about 3 hours. Grate temp started at about 350f but I stupidly fired reused Kingsford to replentish my pile and it dropped for a bit.
