Been a while since I've posted a cook..... this was not on a Weber, but on the Kamado Joe, hope you don't mind.  The setup on this is pretty cool with the cast enamel pot I have - browned the ground chuck with onion over open coals, then inserted deflectors for the 4 hour simmer with pot lid off dome closed.  Could be done with a WSM, WSK or even a kettle as most of the cook is indirect.  Used bush's chili beans, fire roasted diced tomatoes, small can of green chilis, tomato sauce, beef broth, an onion and  seasoned with chili powder, cumin, onion powder, garlic powder, white pepper, black pepper, red pepper flakes and salt.  This was a really good pot of chili - no recipe, just dumped in what Kellee and I thought it needed.  Beaux and I enjoyed some much needed deck time.

Cheers!

Very nice.  I'll take a couple of scoops, but in my family we serve it over a little white rice.  I'm guessing 'cause growing up my brother and I were wolfing stuff like this down like crazy and my mom wanted to make it last a little . . .
