Title: 5lb Pizza Fatty

Last night I decided to try a pizza fatty.  So I used 3 meats. Sweet Italian sausage, Hot Italian sausage, and ground beef 85/15.  Started with tomato basil seasoning then, Pepperoni, jalapenos, onions, mushrooms, sauce, bread sticks, black olives, three cheese blend, Mozzarella, smoked swiss and smoked sharp cheddar. Wrapped in 1lb of bacon and smoked on the WSM 14.5 for almost 4 hours.   End result was delicious but tasted alot like bacon!!!

That thing is HUGE!!!  Guess you're gonna have some leftovers!

For most of  the week I guess.  The wife wants me to heat some up with some eggs for breakfast.

That looks absolutely delicious!!

I have done the "fatty for breakfast" thing.
Cut a half inch thick ... or thicker slab, onto hot cast iron pan, then a sunny side-up egg to top it off. Fantastic!  :D

Ive never done one of these before, but is there just a ton of grease from the meats as this is in the smoker?

Yeah my water pan is full of grease.  I did use water in the pan.

That may be beyond fattie......lunker, perhaps?   Canadian honker?

Almost into the class of: more than a fattie, it's an obesity !!!!!

I aim for about 275f & 165f finish / int.....found if they go too fast, the sausage & some other stuff will get dried out & the grease drop does get bad.....sound about right?

I smoked for about 4 hrs at 265 and then fired up the silver for bacon crisping.  About 5 mins each side.
