Title: Salmon belly.

Hot smoked salmon belly.
Dry brined with salt, red pepper flakes, onion powder. B&B char logs with cherry chunks. Extremely rich and fatty so i smoked it at 260-270F to render some of the excess fats.  (https://uploads.tapatalk-cdn.com/20210921/2997bf05775c0abad5c939e1c30e3918.jpg)

Char logs are great. Pretty much all i use these days. Very dense, last a long time and it burns extremely  hot if cut into shorter lengths. Minimal smoke at startup also.
I cut them to shorter lengths for high temp grilling.  Tap it with a hatchet and it breaks without shattering.

Awesome rig and I like the char log setup. Never tried them before. I imagine the salmon doesn't dry out with the high fat content?

Extremely high fat content so had to smoke it at a higher temperature (260-275F) to render the excess fats.  It doesn't easily dry out like a regular salmon filet.

@Jules V.  Just makin' a fun reference to all the covid weight I've gained over the lockdown last year, at 5'9", I went from 168lbs. to currently 201lbs. #fatlivesmatter is just a joke on my part! You know you're fat when you

can twerk that belly blubber, fortunately I'm not there yet!  Just wishin' this damn coronavirus would come to an end!
