Title: Over night brisket In the Summit

Put some brisket in around 11pm. Took about half hour to get the temp set at 120c / 250f.
7am this morning went outside and she's sitting at 119c/246f couldn't ask for a better over night cook. Wrapping for another 4 to 5 hrs then the esky for 4hrs for burgers tonight. Update pictures to come. Happy grilling

Your brisket looks great.
Everytime I see another smooth running overnight cook in a Summit it makes me want one that much more.

You won't regret it if you get one. But the other kettles won't like her because she's all you will use
