Cooking some ribs on a quiet Saturday. Some firsts for are making it a fun cook...
-First time I have cooked on the Chestnut
-First use of my new SnS
-First use of @CatskillSmoker's maple sugar in the rub
Can't wait for dinner!

I was cooking at 225-250 with a slow 'n sear. Too vent was wide open for most of the cook and 2 bottom vents were cracked open and 1 was closed.
