Cooked a Jennie-O 14 lb turkey on the WSM using Weber Charcoal and no smoke wood. No brine (as the label indicated 8% solution), straight out of the package and rubbed with olive oil, sea salt, blk pepper, and a little bit of Plowboys Yardbird. Set up the charcoal with my Pizzaque screen and dumped a half chimney of lit charcoal on top. Target temp was 325* but the smoker ran about 300* until the rain came and dropped to 275*. 4 hours later the breast hit 165* and thigh around 178*. Turned out great, very moist and good flavor. Looking back I should have lit a full chimney to get the temp up but it turned out good regardless.

Nice turkey. And I like the sarcasm of leaving the popup in the breast, but using electronics to track temp.
