Title: Spring Cooks (pic heavy)
Post by: Duke on May 01, 2013, 08:47:46 AM
I have been doing some different cooks now that springs here and some other items are available.

I started with teri chicken skewers over oak lump.

These are what fresh meaty ribs from Mi Pueblo look like. Cheaper than the lousy meatless bones at the grocery store too I might add.

Rubbed with cowboy coffee rub

Here they are. Two racks in the 22 flat made possible thanks to the elevated half grill with room to 'spare'. :D

Off and ready to pull

Plated with some baked beans. I still need to make the drip beans.

Dad brought a tart for desert.

Then it was salmon steaks on the elevated half grill over oak again from Mi Pueblo. Sorry no plate shot. :(

Marinated chopped chicken in the paella pan from, well you know where. ;) I forgot the grill shot. I also did the tortillas on the grill.

Here it is plated with some fresh cotija cheese and fresh green salsa. I tore these up! :D

Love your versatility Duke!  If Mi Pueblo here is anything like yours, I'm heading over there for some beef ribs pronto!
