Title: Name that meat and grill size
Post by: HoosierKettle on December 07, 2016, 03:17:22 PM
Don't know if this has been done before but sometimes it's hard to tell in pictures. I'll go first. Name kettle size, type and cut of meat.

It was some Beef Short Ribs over a pan of root crops including new potatoes, sweet potatoes, onions and seasoned up with some spice and fresh herbs.

Corned beef on a ranch.

Very close...these are some brisket flat pieces that I corned for 5 days. They were then rubbed again (for pastrami) and placed on the Ranch for my beef pastrami meat for sandwiches.

Smoked heavily with some hickory chunks.

Made a nice batch of beef pastrami.

First ruben (made with the pastramied beef) out of this cook.

I thought that might throw you. Sure looks like yams, and of course it's an SSP. It's butternut squash. Cut into one inch cubes, tossed with EVOO, S&P and grilled for 40 mins or so - the first 30 indirect then charred over the coals 5 mins a side, give or take. Finished with a dollop or two of whole milk ricotta cheese, fresh minced sage and toasted pine nuts. Very good. This will be in the rotation again. Would be great with smoked turkey - maybe again at Christmas?

This is a very rich bread called Kolach and is being baked on my standard 18" WSM cooker.

Another picture of how it is prepped for the cooker.

This is a couple of loaves of Italian Bruschetta bread on a raised grid which is a kind of dressed up focaccia bread. The slab potatoes are cut about 1/2" thick for this meal. It's the start and  is part of a larger cook and bake on my gen 2 performer. I will include the other parts of the cook.

The bread and potatoes done.

It also included some mixed veggies and fruit.

The meat on this cook was flat iron steak.

Ok, I just about stumped you...this was a full slab of St. Louis cut spare ribs on a Weber Jumbo Joe kettle. Again, this was part of a larger cook.

I have a pan of barbecue pit beans on the lower charcoal grate with some brown sugar on top. Then the cooking grate over them with the ribs on top so the drippings from the ribs will go into the beans for additional flavor.

Later into the cook and after I had wrapped my ribs, I did my quartered potatoes mostly over the direct heat.

Beans ready to come off of my kettle.

And you add a cornbread slice, a tossed salad, and a cherry pie and ice cream dessert, and you have a great meal.

You are right as it is a Jumbo Joe kettle. The food on the original large Weber cast iron griddle (6560) are cornbread griddle cakes. I use them as face up buns for several treats. This cook was some Jamaican jerk burgers and the sides.

I did 6 of the cornbread griddle cakes.

Cooked the jerked burgers next.

Then cooked the potato slices, onions, and pineapple.

For my lunch, I started with a cornbread griddle cake, added some lettuce, a jerk burger,  next on was a pineapple slice, a few rings of the grilled onions, some of my very hot jerk sauce, some grilled pepper strips and then I sprinkled on some chopped up green  onions.
