Earlier this year I roasted up some hatch Chilis and made a few skillets of cornbread . I took one of the loaves and put it in the freezer to save it for Thanksgiving and my favorite turkey day dish which is cornbread dressing/stuffing .

I crumbled the cornbread up on a sheet pan and dried the pieces out in the oven at 200 degrees until crunchy.

To that I added chopped celery and onion , chicken stock and melted butter along with a few seasonings and herbs .

What a great idea! Although it looks like you had the issue one would expect with cornbread: crumbs instead of chunks of bread. I wonder if you break it up while still fairly frozen if that could be avoided. Or, maybe it doesn't matter and it's incredible anyway!

I personally loved the spicy dressing , great change of pace . I'd like to spice up a turkey with some heat and stuff it with this stuffing ...unfortunately my traditionalist family vetoed that idea

My mom makes a cornbread stuffing, I love it and prefer it to bread stuffing. But then again most everyone thinks their mom makes the best stuffing!
I'd love to sneak some hatch chiles into her cornbread next year :)
Awesome Idahawk. We always make a dish of traditional dressing AND a dish of green chile/pine nut-laced dressing.
Turkey gravy over green chile dressing - hard to beat.

Yes my mothers dressing is still the best she's 91 :)
That sounds great were the pine nuts toasted first or just added and then baked with the dressing ?

Toasted in a dry pan. They add great texture and flavor.
The green chile is the star of the show though.
