We'll be doing beef back ribs today. We're having the "neighbors edition" tonight. We have a ton of leftover food as sides.

My other little man decided he would be cooking brunch this morning. His weapon of choice is a Euro Black OT Premium rocking Stubbs 100% all imitation competition briquettes.

On the Menu:

We had reservations in the second seating at 11:30am but the chef pulled some strings and we were seated immediately. All-in-all a fantastic brunch!

Day 5

The aftermath
I think things calmed down around 3:00 am so we're off to a late start today , thankfully my breakfast items are already cooked and just need put together

I fired up the MT that I got from 604 , it's became the go to workhorse as of late. Yesterday I had brined and hot smoked a sockeye salmon for my wife's favorite dish Salmon Hash .
Leftover roasted corn and spuds along with some onion start things off , a quick brown before I add the salmon , since everything is already cooked it's a fast brunch .

The drip beans ended up with a couple pounds of pulled pork in them, and they were spicy but everyone loved them. Simple recovery dinner coming later tonight.

Had the family over for lunch today before we shoved kid #1 off to camp for a week.
The menu was stuffed pork loin and baked beans on the grill along with the usual sides (deviled eggs, potatoe salad, etc).  Then I gave apple bombs a shot for dessert

Everything turned out well. I overcooked the pork a little, but it was very tasty. For the Apple bombs. They were great, but I need to skin the apples next time. No one went away hungry. Happy 4th.....er 5th

Those are some great results @OoPEZoO ! Beans to Bombs that looks delicious!

For the apple bombs, what type of Apple did you use? I've tried a few varieties and my favorite so far are Ambrosia Apples. If you leave them on for at least an hour the skins will really soften up and you can eat with just a fork.

Again - great job!

I used Granny Smith apples. That's what I like to use for baking pies, so I thought I'd give them a shot.  I think the skin was just too thick to cut through this time of year.  I cooked them for a little over an hour, and topped them with a big scoop of vanilla ice cream. We were all laughing about it and had this big pile of apple skins sitting on a plate in the middle of the table. No one cared, and I will definitely cook them again.

Here's lunch for today. It's been smoking hot the past week so I was only hungry for a snack. That being the case I figured why not experiment a bit? ... plus there's always glorious corn as a backup failsafe ;D

I've really been enjoying grilling different fruits lately and we just happened to pick up a big basket of fresh picked Okanagan Cherries - I figured why not?!?! Alongside that I also found inspiration from Mr Meat Ninja and grilled up some frozen Pad Thai Spring Rolls and Sweet Chili Sauce.

@idahawk salmon hash! Genius! This may become my wife's new favorite! Thanks for the idea - now let's see if I can execute...

@OoPEZoO do you find that the roasting rack helps your cooks? I haven't bought one yet but I've been thinking about it. As it is now I do all of my roasts and loins directly on the grill grate.

Today was pulled pork and coleslaw.  1st time attempt and a BIG hit with the missus.  Photos are zero hours, 3 hours, 6 hours, pulled, and plated.  Apart from adding to the snake after I wrapped it in foil at the 165 degree mark, the whole thing went without a hitch:

I like it a lot. I picked it up at Target a few years ago during their end of season clearance for next to nothing. I would not have payed full retail for it, but I love it for large roasts, hams, and turkeys. When sitting on the grate, there is just enough clearance under it to slide a 9x13 catch pan under whatever you are cooking. I just wish it was easy to clean

So here is my final cook of the weekend: two grilled rabbits and kielbasas. I fired up the 22" and got my new gourmet grate ready. I decided this would be a good cook to try out the Vortex that I just bought also. I rubbed the rabbits with Weber Kickin' Chicken seasoning and then cooked them indirect. In the end, I decided to make a couple of pulled rabbit sliders with thick cut bacon and smoked swill cheese.

Unfortunately, I wasn't able to get close to my grill this weekend until this evening. All I have to show is a buttered, alder smoked salt and pepper crusted spatchcocked chicken. It turned out pretty good.

I am loving everybody's cook-ups, I must say.  Well done, everyone!!

Today (Sunday) was the last day of my week off.  Had an awesome week, so far ....

It started out with a brisket overnight (http://weberkettleclub.com/forums/grilling-bbqing/brisket-made-easy-with-a-weber-kettle/) cook.
Then had a get together (http://weberkettleclub.com/forums/meetups-events/second-ontario-canada-meet-june-30th/) @MrHoss ' place along with @AcrossFromHoss and we cooked up a mess of food.
I then did another overnight (http://weberkettleclub.com/forums/meetups-events/wkc-2015-summer-ecook-day-four-july-4th-2015/msg174258/#msg174258) ... this time a pork butt.

Today had a theme ...  But I didn't plan it ... It just happened that way .... Strawberry / Red ...  :D :D

First off, I did up some turds.  It happens to be strawberry season here in Ontario.  It's usually a 2-3 week window, and they are so good.
I decided to mash-up some over-ripe berries.  I strained them, then added some maple syrup, then lightly strained that mash.  I saved the juice.

A little piece of Balderson double-smoked cheese ... for some tang, so to speak.  ;)

I wanted to try to keep the temperature low, so it could absorb some smoke. 
After 40 minutes, I decided to drizzle the fillet with the sauce.  I removed it after one hour, then served.

This is my first post, and the first time I smoked a tri tip like a brisket... We all thought it turned out great! Had a heck of a time keeping the temp at 250 (so any advice is welcomed  :o).

Hoss rocking the pizza, Hofy's magazing quality plated pic, MM with pastrami gus, Jason with some sexy looking corn (I have a corn problem), tb with another great looking plate-up and photo, MacEggs going all out with a very impressive cook, Ron with a brisket cook on his sweet new ranch, and last but not least new member @Smokin@5588FEET turning out a stellar looking tri-tip on his first attempt... Tremendous cookups by everyone on all the days.....got a chance to look thru in about 3 or 4 different sittings & wow.....what a great bunch of cooks.....everything from the most simple stuff to the really complex was bang up well executed !!!!

PS: @Smokin@5588FEET .....just less coals will work......the chain or "snake" method can get you running at a good low heat for a long time.....
Start a question thread with a little info about what you did & what happened in the "Grilling & BBQ Forum" section & we'll get some good answers & descriptions going for you...OK?

Once the mushroom sauce thickens up and turns a nice golden cream color, remove from heat and season with salt and pepper. Next set aside to use as your steak topper.

An interesting side note...

I made some corn for lunch but we didn't end up eating a couple pieces. Instead I let it cool still in the husk and then just reheated it on the kettle later come dinner time. Now here's the strange bit - it was notably sweeter and super flavourful the second time around. I suppose I could have gotten a bit of a dud cob but I think there's more to it ;) Will experiment more tomorrow 8)

I wanted to try and do something with food cooked on the grill but not be the typical meal.  so i decided to make a hearty pasta salad.  i used thighs, grilled corn, diced pepper, and green onions.... i forgot to mention i also used diced swiss cheese and sharp chedda.  i didn't grab a pic of the corn off the cob... as it got a bit messy. 

seasoned the chicken with Montreal seasoning.... we love the stuff.  after it came off we had a few "samples" , the skin was amazing.... then i deboned it.

thigh meat deboned.  i season my thighs under the skin and then wrap the skin all around... so the inside meat gets really good flavor.

i wanted a simple cream based dressing.... miracle whip and sour cream.  My girls loved oil based dressing.  so i separated and made two.  the one with the miracle whip and sour cream is sooooo very good.  it really brings out the charred flavor of the corn and the smokey grilled chicken.  i love it.  this is the flavor i was going for.  the other one is very good as well.  i used olive oil, balsamic, and a balsamic dressing. it is very tasty as well.  but the flavors though they melded together.... the flavor of the salad dressing is more pronounced.  i prefer the true grilled flavors shining through.  it was a lot of chopping/dicing/prep... but.... I'm pretty satisfied with the outcome.  it was a nice change from the usual sunday meals.

After all is side and done, the chicken was still nice and juicy. Just the right amount of smoke. I'd eat again.
