A few cooks over the last little while.

Going back to basics. Lamb and veggie skewers. The veggies had salt and pepper with a touch of EVOO.


Love 'em or hate 'em, these things are the absolute bomb!


They consists of little parcels made of kebba which is a mixture of ground meat, ground wheat, and a mixture of spices. These have a filling which is traditionally one of two things. The first is a mixture of ground meat and onions. This is partly cooked before being stuffed inside the parcel, and continues cooking when grilled. The second type is a mixture of onions herbs and fat. Yes that's right, fat!


This shows the meat stuffing. I forgot to mention the pine nuts.


And this one kinda shows the fat stuffing.


Just some simple Kafta skewers that were seared direct, then moved to cook indirect. Simple often works best.

The lamb skewers looked really good. I'm gonna make those soon. I'd also love to see your recipe for the stuffing. I wish I could've sampled one of those!

The 'footballs' as you guys call them are a traditional Lebanese or Mid Eastern food that is hard to pronounce in English. And it is something that my other half makes. The ingredients are roughly as I have earlier mentioned. Unfortunately, most of our recipes are seat of the pants stuff so it's fairly hard to pass them on. Even passing them on to my daughters, it's a given that each person will tweak the recipe to suit their tastes.

Having said all that, I'll write something down a bit later on that will give a better description of the steps taken.
