First time at CSR

Never grabbed em' from the store before, but I picked these up a week or so ago.  Been in the freezer since then,



Kept it simple by using a stock rub



On the 18" WSM



Hickory chunks for smoke



Coming along nicely, but I'm looking for a bit more smoke & color



There it is.



Again, taking the easy route by using a bottle of sauce and some apple cider for the simmer bath.



Covered and all vents wide open.  ET-732 spiked to 400couple degrees, but settled into a 330ish range for the duration.



Thermometer & probe test says they're done.  I didn't finish on the grill to set the sauce.  No reason, just didn't.

For the first go at it, these were pretty daymn good.  Wifey even asked why I haven't made these before now.  hahaha
I've always had gas...  And now a bunch of kettles because of this place.  Thanks!

Those are a staple for us. Haven't tried on the WSM yet . Looks good!

Ah CSR's, it's been way too long. I like your techniques for them. Another great cook is pork steaks if you haven't tried them. I am planning some soon.
