The elusive Carnitas Butterfly (aka. Pork Monarch)?

It's not a Fattie, it's a Skinnie?

Little fingerling type potato, this variety is called "anya" and was two bucks for a small bag.

This was great  plain, and better when I spooned a dollop of sour cream and topped it with a couple chives.

The POC worked and i will definitely be playing around with these.

Yep.  Kaz had posted the bacon wrapped tots the other day and that was some inspiration.

I am always looking for what I call 'finishing foods'.   These are items that can cook while the grill or smoker is done or almost done with the 'main food'.  I started trying things like this when I used to use the WSM every week.  Part of the criteria that makes the finishing foods even better is if they are able to be assembled simply, or else I am in danger of losing my patience.  So these things require no coring, pre cooking, scooping, cutting, etc.  One Anya potato, One Strip bacon, wrap, put on grate, done.  I had one drizzled in BBQ sauce and it was great - and simpler even than the sour cream, just use some sauce from whatever you are cooking.  (make no mistake, the next version is going to have a strip of jalapeno in there, even if that does compromise the simplicity)

I think I will call them SPUD missiles.

I've done something like this with wedges, but the use of fingerlings is a WAY better idea !!!!
