Abbacchio alla Romana (Lamb alla Romana)

Last night I wanted to try a recipe posted by a friend of mine on another forum and from the moment the result was amazing I want to share with you ..

ingredients:
1 kg of lamb into pieces
Extra virgin olive oil
Salt and pepper
Sage, bay leaves and fresh rosemary
2 cloves of garlic
1/2 cup white wine
some anchovies
vinegar

In the cast iron skillet I put the lamb with olive oil, garlic thinly sliced​​, a sprig of rosemary, sage and bay leaf and cooked with the direct method for about 55 minutes total and I smoked for most of the time with pecan chips. Towards the end I made a sauce with anchovies, half a clove of crushed garlic and very little vinegar and let cook for another fifteen before taste. I have no words to describe the taste I only say that it was the best lamb ever eaten before ... try it because it is a very simple preparation that gives a very special taste!

That looks fantastic! I like anchovies on pizza but had not thought to try them on other foods. Looks like something I'll have to try. Thanks!

Thanks HankB...perhaps I have not explained well, I put only 3 anchovies fillets in oil! Try it, you'll not regret!-

That looks delicious.  I don't have much experience with lamb but it's becoming more commonplace to find it in grocery stores where I am.  Either that or I'm just noticing it. 
My father loves lamb.  I might try to do something like this for Father's Day.

This preparation the advice to you is very simple and much effect .. even my father in law loves the lamb and he liked it very well cooked so! try it and you'll love it

Hi, mirkwood! Exactly the salt and pepper just to taste....not too much, you can add them after cooking a little more!
