First pork ribs.

One thing I have never attemted is pork ribs. I thought it was about time I tried.

I had 5 racks to do, (I never do shit by halves) for my family of 4. So I rubbed them down with various rubs and rolled them so they would all fit in the kettle.



I had the kettle fired up as I put the ribs aside to come up to room temp, and then set them in there with some plum wood to smoke away. And in the mean time, I had some corn brining in it's husks for a few hours while waiting for the ribs.



After the ribs had shrunk a little,  I unrolled them and let them get a full serving of smoke. In hindsight I probably didn't need to roll them. Oh well.....


At about 5.5 hours I prepped a second kettle and got the corn and turds going on a low and slow.


And shortly after is when I started saucing the ribs.


About an hour and a half, or thereabouts, we were ready to rock and roll. I took the ribs and turds of, and left the corn on for a little longer on direct to get a bit of colour.

I carved up the ribs and served them with a simple home made slaw using yoghurt instead of mayo for a slightly healthier choice.



We ate well last night! I hope you enjoy.

Yes, all 22's. If you're referring to the fact that I rolled them, I probably could have gotten away without rolling them but I wasn't sure.

Yep... First time for pork. They were OK, but I think they were a touch dry.
If it breathes, we can cook it!

Cool. I love doing ribs. Did you foil them at all?

I would highly recommend checking out Costco and Nicholson & Saville for your next lot of ribs too, they sell some nice big ones.

You will definately need to roll them to get 5 on. ;D

beautiful ribs compliments and nice setup! I see that you used the smokenator right? What do you think about it? I the other day I built an aluminum and I'm doing to make a stainless steel ..the pan with the water you have not used? even a terra cotta saucer? excuse me for asking too many questions and thank you very much

Prof, mine is made of alloy as well. I didn't use a water pan as it was suggested to me that it really wasn't big enough to do any good. But I will give it a go to see if it makes a difference.

Thanks Jocool, I intend to use it without water pan and without clay heater diffusor..I'd rather leave it free or at most with a rectangular clay heater diffusor! This is the result .. picked up this morning!
