Here is a take on their chicken

I have made this several different times and it turns out fantastic

No smoke wood needed

Sounds good. I'll have to give it a try as an alternative to Roadside Chicken.

Don't you think a little oak or apple would add to the flavor?

I never found smoke wood necessary on this cook

charcoal alone does the job but smoke would add another layer of flavor !
