2-2-.5 Ribs

Cooked up some spare ribs last night.  Didn't get too many pics, but they turned out great.  Did 2 hours on apple smoke at 250.  Then wrapped for 2 hours at 275 with brown sugar, tiger sauce, honey and some more rub.  Glazed with a nice sauce and let it cook for another half hour.  Turned out great...

These were done on a 22" WSM.  Foil wrapped water pan.  6 chunks Apple wood and KB charcoal.  Minion method with ~25 lit coals.  Held steady between 250-275 for the whole cook.  ;D
