I Think I Need A 26"

or some rib racks.

I'm attempting my first set of ribs.

Trimmed up two racks of St. Louis ribs this morning.

Made a rub and covered the racks and tips.

I wanted to do a snake but I didn't think I had enough room so I did a small minion method in my coal basket.



Lit 12 coals on my Genesis side burner.



Dropped my "Drip Pan" in the bottom. Bush's Baked Beans.



And now you can see why I need some more real estate.



Plan to do a 3-2-1 and see how they turn out.

If my past experience is any indicator, they will be pretty good even if they are not perfect.

Got a thermometer in the vent so I can tell when to add coal.

She is rollin some Hickory smoke as we speak.

There's plenty of room on a 22 for what you're doing.
I use the snake method and I like to use foil to cover the center, as well as the areas where the meat is over the charcoal.
The intakes are open just a smidge ... walk away ... check on them after 4-5 hours. Usually close to done.  :)

Great looking cook so far.  And I hope you get a 26in.  But a simple rib rack can solve your issue of real estate for cooking ribs.  When you wrap the ribs, just take the rib rack out and stack the wrapped slabs onto of each other.  Then when you go to sauce, you can lay the slabs down like you have them, or put them in rib racks and sauce.

That is a different problem than what BigRix presented!   ;D

I want a 26er just to have a 26er.  But you can definitely do more than 2 slabs of ribs on a 22.5" kettle, I have done 4 slaps without issue. :p

When I am just doing a few coals, I turn it upside down. It kinda funnels the coals into the middle.

Here it is at 2.25 hours. I was at the store and should have added coals at about 2 hours but it didn't dip too far.

Bigrix, I also want a 26er! In the mean time this technique works well for me:

Not my pic, but I can do 3-4 racks on my 22.5 this way. I use a brick to divide the bowl and Minion-type fuel set up.

Well maybe I don't NEED a 26" but I still want one.

Ribs turned out awesome.

They look great! Glad to hear you were happy with them.

I was going to suggest rolling them as well but it looks like jcnaz beat me to that.



Instead of using a snake, I used a single basket and just kept adding a few briquettes every hour or so.

There are other reasons to get a 26, like big turkeys.  ;D
