Rainy Day Birthday Brisket

It was a rather wet day last Saturday in Upstate New York but my grandson was pretty psyched up about having brisket on my birthday. Well, I don't really need a lot of persuasion to fire up the Performer...



5.5-pound brisket flat, injected and seasoned with Montreal Steak seasoning...



Set up using the snake method which kept a really steady temp throughout the cook...



Three hours in...



Definitely worth fighting the rain for...





It was mostly all gone before the day ended.

How long was the total cook and what temp internal did you pull out at?

The total cook was about 7 hours. I foiled about 190 because everyone was getting hungry and it was getting late.

I think the final temp was averaging about 207 but I was mostly probing to make sure it was tender all the way through.

It might have been a hair overdone, but still juicy and delicious!
