Got a 4lb little shoulder for my 2nd snake. Stacked the coals 2 on 2 with cherry chunks and the last of hickory chips. I got a late start the rub was only on for 1 hour...got the grill to temp about 12:15 and will hopefully run hot enough to be done for dinner.

The beans went on 1 hour in.
Bushes OG
1 can Pintos drained
1/4 cup bbq sauce
1/8 molasses
1T rub
2 T brown sugar

Rubbed

Snakes in a kettle

Beans pre stir

1 hour in holding about 300, trimmed the vents back a bit

Beans are in a small water bath to protect both the glass and prevent the burnt sides. I'll leave em in for at least 3 hours to soak up some porky goodness.

Color is coming along nicely...the beans look juicy. Temps at about 180, holding out for 195 then I'll wrap it up for an hour.

Looks great! Nice smoke ring. Gotta loves compliments from the missus too. :)

So did it hold around 300 with the 2+2?

And then some...the 2+2 was quite warm. I could've gone Warner if I opened up bottom and top. I went 1/2 open top and bottom. Bottom was one touch.

Also the lid temp ran WAY cooler than the digi temp that was in the roast. I was showing about a 75 difference. Digi was leaning towards the snake much lower but that's a huge variance. I figure I was around the middle.

Thats what I thought. I always go the 2+1 and even then I find it runs away if you don't get the vents right. And yes, a big variance between grill level and lid therm level temps. :)
