1st Time - Jalapenos to Chipotles (Updated - Done)

After growing a ton of jalapenos this summer I decided to try to smoke them and make them chipotles. Halved all the red ones and cut off the stems. Smoked in the WSM @ 180F for about 6 hours and then moved them to the oven @ 170F to finish drying them out. Used pecan to smoke em. Found so many ways to do them on the interwebs but I said I'm going to do them the easy way and not stress about it. I'll put up some finished photos later and will try to grind them up as well. Hopefully they turn out good enough to use. *NEW* Left them in the oven about an hour, pulled em out and ground em up. Verdict - just as spicy as the McCormick chipotle powder I have but mine seem to have an authentic smoke flavor instead of a processed one. I smoked them with all the seeds and veins, just threw out any seeds that fell out into the empty water pan. Used 25 unlit and 10 lit with 1 chunk pecan to start, added 5 unlit and 1 chunk pecan every 2 hrs or so (twice). Total time on smoker and in oven was about 7-8 hours. My peppers were smaller than those in stores so maybe that's why it was so short. Some folks say you have to do them 24 hours. Those jalapenos must be huge. I'd definitely do this again next year.

side note, my lil brother hates Chipotle anything because he misspelled that word in the first round of the county spelling bee, lol. He refuses to eat at one, and try food with it as an ingredient.

You did not know that Chipotle's were smoked jalapenos?

You are correct Ed...only had a few poblanos and they stayed green forever...I'd like to try those too.

No idea L...I read one where they added at least 6-8 chunks of pecan for a 8-12 hour cook on the smoker. Apparently the smoke is what actually dries out the peppers, not the heat. Hence, the low heat temps.

I never had a hab believe it or not. Sorta in a salsa. Too spicy for the family so I usually don't cook with them. But I really want to see yours Eggs!

Nice work, Terry.  I've always wanted to make my own chipotle, but can never find red jalepenos anywhere.  I guess I'll need to grow my own!
