The XC and I decide to do a tri-tip for dinner tonight. We marinated a 3lb hunk of meat in soy sauce and Stone Coffee Porter. Then we rubbed it with cracked black pepper, kosher salt, garlic, Worcestershire powder and chipotle powder. Set up the 2-1 snake method with mesquite chunks and put the meat on. We made corn with blue cheese and buffalo wing sauce. We pulled the tri-tip at 5 hrs with the internal temp at 175. We rested it for 15 mins then sliced. It turned out perfect!!
