Fresh Salmon starting to come down from Alaska . Going to smoke up a bunch but I had to have a fresh piece right away.
I soaked the cedar plank in a little wine , I like to add lemon between the fish and the plank , I finished with a maple honey glaze , served with wild rice , corn , onion, peppers and a garlic Parmesan pull apart , the leftovers made salmon po- boys with an avocado mayo, red onion and some arugula .
